For mild steel in all Global knives but otherwise OK. A small note of caution though. This is not a "chef's knife" although it is often sold on this. To stand and chop things with it is almost unbearable if you do not have kids hands for turning the knuckles of the cutting board. As the name indicates, it is a tranchérkniv and be so used.
